Part of employee-owned Denver restaurant group Edible Beats, Vital Root brings fresh, plant-based, and earth-friendly meals to the table. This restaurant focuses on sustainability and offers quite an impressive gluten-free menu. Looking through Vital Root’s menu, you’ll find that every dish — save the drink options — is labeled with a bright pink “GF.” Just about everything on the menu can be ordered 100% gluten-free or vegan by request. In fact, Vital Root received Gluten Free Approved certification in 2023, meaning it meets and upholds the standards of a celiac-safe environment. Vital Root’s staff is trained to follow specific kitchen procedures to prevent cross-contamination and keep all guests safe.

Marco’s Coal-Fired Pizza

The team at Marco’s Coal-Fired Pizza takes cross-contamination prevention seriously. While not a 100% gluten-free restaurant, Marco’s website lists each precaution and step taken to safely serve fresh pizzas to those with strict dietary restrictions. The restaurant keeps separate equipment and toppings for its gluten-free pizzas and never prepares them in the same area or uses the same oven as those made with traditional flour. For its gluten-free pizzas, Marco’s uses Caputo fioreglut flour to craft a soft, chewy crust — guests are guaranteed a flavor that is almost identical to traditional pizza.
